Before starting this recipe, peel and cut the orange into wedges and freeze overnight. If using fresh pineapple, cut into chunks and freeze overnight.
Submerge can of coconut milk in hot water and allow it to set for 5 minutes to ensure the coconut cream softens.
Shake can of coconut milk vigorously before opening. (This helps to ensure the cream and milk have combined.)
Add 1/2 cup of the canned coconut milk to the blender.
Add the frozen orange wedges and frozen pineapple chunks to the blender.
Set your blender on lowest setting and increase up to the highest setting allowing the whip to blend for about 1-2 minutes until the whip is the consistency of soft serve ice cream.
If you are using a Vitamix that has a frozen dessert setting, then choose this setting to blend the whip.
Pour into glasses and serve immediately.
