Chicken Parmesan Tenders is a quick way to remake Chicken Parmesan, gluten free. It is a meal that I missed the most when diagnosed with Celiac. I’ve tried different flours and breadcrumbs to make it myself, but I love this recipe because the breading is already done for you when you buy Bell & Evans Gluten Free Breaded Chicken Tenders. Just boil some pasta, add your favorite marinara sauce and dinner can be ready and on the table in about 30 minutes with very little effort.

The Chicken

I’m able to find Bell & Evans Gluten Free Breaded Chicken Tenders at my local Whole Foods in the frozen section. The chicken tenders are uncooked so they need baking before serving, but before baking them I add a couple steps to transform them into chicken parmesan. I remove the frozen tenders from the package and dip each chicken tender into a whisked egg. Then, I dredge them through an herbed parmesan cheese mixture and place them on a non-stick silicone lined baking sheet. I bake them on 375° per the package instructions, until they are golden brown.

The Sauce

I like to serve this recipe with my Homemade Marinara Sauce. I make a big pot of this recipe and preserve it so I always have a jar on hand. This is our favorite marinara sauce and it has taken me years to perfect it, so I can’t run out of it. Although, if you don’t feel like cooking a homemade sauce then picking up your favorite jar of marinara sauce at the grocery store would be just fine and would save you some time.

The Noodles

The gluten free noodles that I use for this recipe are Barilla Gluten Free Spaghetti or fresh gluten free spaghetti pasta from Whole Foods that can be found in the refrigerator section. The fresh pasta is absolutely divine and only takes 2-3 minutes to boil. I’ve served these noodles to my guests that do not eat gluten free and they couldn’t believe they were eating gluten free pasta. They’re that good! This recipe could also be served over a roasted spaghetti squash. Spaghetti squash is nutritious and lighter than pasta. Parmesan Chicken Tenders

Ingredients
  

  • 1 (12 ounce) package of Bell & Evans Gluten Free Breaded Chicken Tenders
  • 1 egg
  • 1/2 cup grated parmesan cheese
  • 1 teaspoons dried basil
  • 1/2 teaspoon granulated garlic
  • 1/2 teaspoon granulated onion
  • 1/4 teaspoon black pepper
  • pinch of pink salt
  • 1/2 to 1 cup parmesan or mozzarella cheese (optional)
  • 1 jar of favorite Marinara Sauce
  • 1 package of your favorite gluten free pasta

Instructions
 

  • Pre-heat oven to 375°.
  • Line a baking sheet with parchment paper or non-stick silicone mat, set aside.
  • In a shallow mixing bowl, whisk egg.
  • In another shallow mixing bowl, mix together grated parmesan cheese, dried basil, granulated garlic, granulated onion, black pepper, and pink salt.
  • Remove chicken tenders from the package one at a time and dip each chicken tender into the whisked egg and then dredge through the cheese mixture on both sides. Place on the lined baking sheet. Repeat this step until all chicken tenders have been dipped in the egg and coated with the cheese mixture.
  • Place baking sheet in oven and bake for 15 minutes on one side and then flip chicken tenders over and allow them to bake for another 15 minutes on the other side until golden brown.
  • Remove chicken tenders from oven and add 1⁄4 cup of your favorite marinara sauce to each tender.
  • Sprinkle desired amount of parmesan or mozzarella cheese over the chicken tenders and place them back into the oven.
  • Set the oven to broil (high) for 2-3 minutes until cheese is melted.
  • Serve with your favorite marinara sauce over gluten free pasta or spaghetti squash.
